Here my Mum's Chistmas cake recipe:
Christmas Cake:
Ingredients:
1 lb Brown Sugar
1 lb Butter
9 Medium Eggs (beaten)
28 oz Raisins
20 oz Sultanas
8 oz Cherries
6 oz Mixed Peel
1 orange (rind and juice)
1 Lemon (rind and juice)
1 teaspoons Cinnamon
1½ teaspoons Nutmeg
1½ teaspoons Mixed Spice
Tin of Strawberries (drained)
20 oz Plain Flour
1 Glass of Spirits
4 oz of ground/flaked almonds
Method:
Prepare all the ingredients and combine well in a large bowl.
Leave overnight with a tea towel to cover.
Prepare the 9½ inch cake tin by greasing the sides and bottom and lining it with greaseproof paper. Then grease the tin again.
Turn the mixture into the prepared tin and bake the cake for 8-9 hours at 300F,150C,Gas Mark2. Reduce the temperature to 250F,125C,GAS and bake for further 1 hour.
