I have three skinless boneless chicken breasts that I have to use for dinner tonight. I also have:
carrots
frozen corn
sun dried tomatoes (but I'm the only one who likes those)
roasted red and yellow peppers
shredded cheddar/jack cheese
soft tortillas
pasta
Italian dressing
balsamic vinegar
olive oil
garlic
half a very sad onion

Any ideas? I don't have enough veggies to do stir fry and I don't want to go to the market again. I hate cooking chicken breasts because I don't have any interesting recipes. Someone must have something out there...

Marinate in Italian and cook on the George Foreman? Do you have one? I can't remember. Serve with a vegetable(s).

(I'm not a very good cook. I come from a line of bad cooks.)

You could do fajitas, but I don't know how to make fajita sauce from scratch.

I don't have a Foreman grille. Yet. But I have a cast iron grille pan, which also doubles as a handy weapon.

I don't have any veggies to put in the fajitas, though, otherwise I'd do that. I love those. And I don't know how to make that sauce either, but the SO just douses his in cajun and hot sauce anyway, and Olivia doesn't like any sauce of any kind. I have the pickiest family in the world.

*sigh* I hate cooking during the week.

Mmm. I guess you can't do roasted peppers in fajitas. My bad.

Make the pasta.
Chop up the red and yellow peppers & onion.
Chill pasta (or run under cool water.
Add italian dressing and a little balsamic vinegar.
throw in peppers and onions (raw)
theres your pasta salad.

Take chicken breasts and trim or what ever you do when baking them.
Mince up garlic, throw on some oregano or basil (if you have some), mix the two in olive oil.
Put mixture on chicken.
throw in oven.
When you have 5 -10 minutes to go, throw cheese on the chicken.
Remove and serve.

thats the best I can do off the cuff

Do you have bread crumbs and parmesean cheese on hand and an egg? I have a handy little chicken nugget recipe that I personally LOVE.

No egg, murph, but give me the recipe anyway...

Ickus, that sounds good.

I may just sear the chicken, cut it up and toss it over pasta along with the roasted peppers.

M, I can't use the roasted ones in the fajitas cause they're in oil and pretty messy. And I have the picky twins to deal with, they don't like roasted peppers in their fajitas. They also don't like mushrooms, tomatoes or onions. :rolleyes:

Actually, now that I re-read that pasta salad thing, I may just do that and leave off the onion. That sounds really tasty.

That sounds good too. If you're going to do that just throw in some of the unmelted shredded cheese.

I'll have to give you that recipe tomorrow. I don't know it offhand...well I kind of do but since we have time. It's easy though - and good.

Olivia's favourite meal is chicken nuggets. This will go over well with her. And by tomorrow, I can probably manage to get some eggs.

I had a lovely dinner with one of the girls from work - just pizza and stuff, Bad Ass Cafe pizza with spicy chicken - but jeepers I'm fierce thirsty!!

I'm too full to be thinking up recipies.
But I would brown the chicken pieces on either side.
Chop or dice the veg (including the sad half onion they'll never notice)
Lay all the veg in the bottom of a dish that goes in the oven.
Put a dash of oil and balsamic vinegar on them - a dash of white wine as well if you have it.
Lay the browned chicken breasts on top and cover it with the grated cheese.
Pop in the oven for 20 mins and serve with pasta.
Keep the fajitas for another day.

Have you got any cornflakes? They make a REALLY tasty coating for chicken nuggets.

Bash up cornflakes, till they are crushed.
Cut chicken into bite size (nugget) pieces
Mix a little thyme, garlic, salt and pepper into cornflakes
Dip chicken in beaten egg
roll in cornflakes mixture
Now you can either bake em in the oven (less oil) or fry em in the pan.

Good. I wound up marinating the chicken in lemon juice, salt and pepper. Grilled it on the grill pan and then made a sauce out of a little more lemon juice and a glass of Chianti. The pasta salad had the peppers, carrots, celery and sun dried tomato in it, along with some balsamic vinegar and some Italian dressing with parmesan and basil. Very tasty. My daughter even liked it, miracle of miracles.

Eli, I've done the cornflake thing, it's good. Another one I like is coating the chicken in plain yoghurt, then in bread crumbs or cornflakes and baking. The yoghurt gives it a nice tanginess.
